-4# chicken cut up

2 T lemon juice

¼ c butter

20 oz can—pineapple chunks

2 T soy sauce

¼ c water

2 T cornstarch

½ t sugar

1 c sliced celery

1 green pepper cut in strips

2 med. Tomatoes cut in 8th

½ c toasted almonds (optional

Directions:
Directions:
Rub chicken pieces with lemon juice.

Let stand for 15 minutes.

Melt butter in large skillet; ad chicken pieces & brown.

Drain pineapple, reserving syrup; add syrup to chicken.

Cover, simmer 20 minutes.

Combine cornstarch, sugar and water stirring constantly until mixture boils & thickens.

Add veggies and pineapple chunks.

Cover; simmer 10 – 20 minutes depending on size of chicken pieces.

Garnish with almonds if desired.

Can be served over rice
