Crush 1 fat clove of garlic and ½ small onion together in mortar, then mix in 1 teaspoon paprika, ½ teaspoon black (ground) pepper, ½ teaspoon ground cumin, ½ teaspoon mustard power, ½ teaspoon cayenne pepper, 1 teaspoon dried thyme, 1 teaspoon dried oregano and 1 teaspoon salt.
