Ingredients: 1 lb. fish fillets (such as grouper, snapper, cod) vegetable non-stick spray ˝ c. fresh salsa ˝ tsp. fresh ground black pepper 2 T. mayonnaise (I use fat free or reduced fat) 1 tsp. lime juice ˝ c. shredded Monterey Jack cheese ( I use reduced fat Monterey jack/ Colby or cheddar)

Directions:Line baking dish with aluminum foil for easy clean up. Coat fish fillets with non-stick cooking spray. Place fish in baking dish. Mix remaining ingredients together in a bowl. Spread evenly over fish. Bake at 400 degrees for 10-12 minutes (mine usually take about 15-20 minutes; it depends on the thickness of the fish). Fish is done when it flakes with a fork.
Serve with brown rice or Spanish rice, fresh asparagus. |
