Ingredients: ¼ c. Butter ½ c. fresh orange juice 1 package of Turkey stuffing 1 c. cranberries 1 to 1 ½ pound Cornish game hen, thawed Salt and pepper Mashed potatoes (optional) Brown rice (optional)

Directions:1. Preheat the oven to 375º 2. Cook turkey stuffing according to package directions. 3. In a medium bowl combine stuffing and cranberries. Set aside until ready to use. 4. Rinse the Cornish hen under cold, running water; reserve the giblets for another use. 5. Mix butter and orange mixture and set aside. 6. Spoon the stuffing/cranberry mixture into the cavity of the Cornish hen. Sprinkle the hen with salt and pepper. 7. Place the Cornish hen on a rack in a shallow roasting pan. Cover the cavity with foil. Pour orange/butter mixture over the hens.
Bake in the 375º oven for 1 ¼ to 1 ½ hours or until the meat is tender and no pink remains. Baste hens a couple of times with orange/butter juice during roasting time. Let the hen stand for 5 to 10 minutes before serving. Serve with mashed potatoes and brown rice, if desired. |
