Ingredients: 1/2 stick margarine 9 oz. cheese tortellini 8 oz. Monterey Jack Cheese shredded (hold 4 oz. out for reserve) 4 chicken breasts flour for coating 1 bunch green onions 1 T. chicken bouillon 8 oz. chicken broth 1 tsp. sugar 4 oz. mushrooms 1 cup sour cream

Directions:Prepare tortellini according to package. Drain well and cool. Place cooled tortellini in bottom of lightly greased 9X13 baking dish.
Cut raw chicken into cubes, dredge in flour and lightly brown in margarine. Remove chicken from skillet. Add more margarine if necessary and sauté onions until transparent. Add chicken bouillon, chicken broth, sugar and mushrooms. Bring to a slow boil and cook for five minutes. Add remaining 4 oz. of cheese and cool until cheese is melted. Add sour cream and blend. Place chicken over the tortellini and pour sauce over chicken. Cover with foil and bake 40 minutes in a 300 degree oven. |
