Chunky Potato Soup
3 medium red potatoes, peeled and cubed
2 cups water
1 small onion finely chopped
3 T butter
3 T flour

Black pepper to taste

Crushed red pepper flakes to taste

3 cups milk

˝ t sugar

1 cup shredded cheddar

1 cup cubed ham


Directions:

Bring water to a boil and add potatoes. Cook until tender, drain reserving liquid (add water to make 1 cup.) Melt butter over medium heat, sauté onion until translucent (not brown). Add flour, season with black and red pepper. Cook 3-4 minutes stirring constantly. Gradually add the reserved liquid, milk and sugar. Stir well. Add potatoes, ham and cheese. Simmer over low heat 30 minutes.
