Spinach Boursin Puff Pastry
3-4 Shallots
˝ stick of butter
1 lb mixed mushrooms chopped
1 cup white wine
1 bunch of fresh baby spinach

Salt & pepper to taste

8 oz Boursin cheese

Pkg of puff pastry


Directions:
Directions:

Chop shallots then cook in melted butter until soft. Add chopped mushrooms and sauté until mushrooms start to brown. Add wine and reduce to half. Add spinach and salt and pepper. Mix until spinach is cooked, take off heat and add Boursin cheese. I use mini muffin pans and cut the puff pastry into a square. Press the puff pastry into the muffin pan and spoon in the cheese mixture. Bake at 375° until golden brown. You can also make individual pockets if you do not have a mini muffin pan, just place the mixture onto a small square of puff pastry and bring the corners up in the middle to seal.
