2 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 eggs, well beaten
1 cup sugar
3/4 cup vegetable oil
2 cups diced fresh mango
1/2 cup chopped nuts or raisins (optional)

Directions:
Directions:
Sift flour, baking soda, cinnamon, and salt together, mixing well. Form a well in the center and mix in the rest of the ingredients, adding the mangoes, raisins, and nuts last. Pour into a loaf pan and bake for about 1 hour at 350. (Baking time may be longer if mangoes are very ripe and mushy.)
