1 9-inch pastry shell with a high rim
1/2 cup chopped onion
1 cup sliced mushrooms
2 T. butter or margarine
2 cups grated sharp cheddar cheese
1 (10-oz.) pkg. frozen chopped spinach, thawed and undrained
4 eggs, beaten
1 1/2 cups half-and-half
1 tsp. salt

Prick the bottom of the pastry shell with a fork. Bake shell partially in a 425º oven for 10 minutes, or until a pale gold color. Saute onion and mushroom in butter for 2 minutes. Spread mixture evenly over the bottom of the partially baked pie shell. Layer with 1 1/2 cups cheese and then with spinach. Beat eggs, milk, and salt until foamy. Pour over spinach. Sprinkle with remaining cheese and bake in 325º oven for 50-60 minutes or until knife inserted in center comes out clean. Let stand 15 minutes before slicing.
