2 oz salmon fillets
2 T. softened butter
1/2 T. chopped fresh mint
1/4 tsp. pepper
1 T. olive oil
1 tsp. lime juice
1/2 tsp. salt

Directions:
Directions:
Combine butter, lime juice, mint, salt and pepper. Mix thoroughly. Place on small piece of plastic wrap, form into 2" log. Twist ends and freeze until firm. Brush salmon with oil and grill until slightly firm and opaque in center. Transfer fillets to individual serving plates and top each with a thick slice of the flavored butter.
