2 lbs. yellow squash
3 tsp butter
1c cracker crumbs
1c grated parmesan cheese
1 medium onion, chopped
1/2 tsp pepper
1/2 tsp salt
1 egg, well beaten
1/2 c. milk

Directions:
Directions:
Cook squash & onion until tender, drain and mash. Add salt,pepper and butter; add cracker crumbs, half the grated cheese, milk & egg. Stir until well blended and pour into casserole dish. Top with remaining grated cheese and bake at 350 degrees for 20 minutes.

Parmesan cheese gives a tart, more unique flavor than cheddar. Cheddar may be used if you prefer.
