Pineapple Upside Down Cake Recipe

2 TBSP butter
1/4 cup brown sugar
1 can pineapple
1-1/2 cup bisquick
1 egg
1/2 cup sugar
1/2 cup milk or water
2 TBSP shortening
1 tsp vanilla

Heat butter in 9 x 13 pan until melted. Sprinkle with brown sugar. Place pineapple on sugar. Beat remaining ingredients on low speed 30 seconds. Beat on medium speed for 4 minutes. Pour over fruit.

Bake until toothpick in center comes out clean. 35-40 mintues. 350

Immediately invert pan and let set for a few minutes before cutting.
