2 pounds fresh broccoli
2 T peanut/ vegetable oil
1/2 t salt
1 slice fresh ginger root, size of a quarter
2 cloves garlic, cut in halves
3/4 c chicken/vetetable stock
I T cornstarch
2 T soy sauce
1 T cold water

Directions:
Cut broccoli flowerets into bite-size pieces. Cut tems diagonally in 1/4 inch slices. Preheat wok or frypn to 375 degrees, add oil,salt, ginger and garlic and stir-fry for 1 minute: remove ginger and garlic. Add broccoli and stir-fry 1 minute. Add 1/4 c stock, cover and cook broccoli for 3 minutes or until tender crisp. Combine 1/2 C stock, cornstarch, soy sauce and water. Stir cornstarch liquid in with broccoli and cook untel thickened ( will have shiny appearance). Serve imediately

You can subsitute celery for broccoli. Stir-fried chicken or beef chunks can be added.
