4 c. Chicken breasts cut into strips
3 T olive oil
1/2 tsp. chopped garlic
onion
green or red pepper
2 c. water
1/2 c. orange juice
1 10 oz. pkg. spanish rice
1/2 c. pimiento stuffed olives
Cucumber for garnish

Directions:
Directions:
Season chicken strips with salt and pepper.
Heat olive oil in a large sauce pan add garlic and saute. Add onions and pepper. Add chicken and saute until lightly browned about 5 - 8 minutes. Add water and orange juice to chicken and bring to a boil. Slowly stir in rice until well mixed and add olives. Turn heat to low, cover and let simmer for 20-25 minutes until water is absorbed and rice is tender. Garnich with fresh sliced cucumber.
