2 1/4 cups all-purpose flour
1 tablespoon plus 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup firmly packed brown sugar
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
1 1/4 cups mashed ripe bananas
1/3 cup milk
3 tablespoons vegetable oil
1 large egg
1 teaspoon white vinegar
1 cup macadamia nuts, coarsely chopped

Directions:
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine banana, milk, oil, egg, and vinegar; beat with a wire whisk until blended. Add to dry ingredients, stirring just until moistened. Stir in macadamia nuts.
Spoon batter into a greased 9 x 5 x 3-inch loaf pan. Bake at 350F for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan, and let cool completely on wire rack
