1 lb. ground beef
1 c. salsa
1 tsp. chile powder
salt & pepper to taste
8 oz. shredded cheddar cheese
1-2 pkgs. Jiffy Corn Muffin mix (and ingredients to prepare)

Directions:
Directions:
Prepare corn muffin mix and bake as directed on package.

While muffins are baking, brown the ground beef until no longer pink in a skillet; drain. Stir in salsa and chile powder.

Pour meat mixture over open-faced corn muffins and sprinkle cheddar cheese over top. This is great served with corn and salad.
