6 large eggs
1/2 lb. mushrooms, chopped
8 ounces cottage cheese, large curd
2 tablespoons olive oil

Directions:
Directions:
Saute mushrooms in oil over medium high heat. Lightly beat eggs, and add to mushrooms and stir. 30 seconds later, add cottage cheese. Serve hot with dollop of sour cream. Salt to taste.

I helped Dad fix this many times. I like the cottage cheese because it 'cuts' the eggs, much like cinnamon 'cuts' the richness of chocolate.
