1 c fresh cranberries - cut in half, not chopped
1/2 c sugar
2 c flour
1/4 tsp salt
1/4 c sugar
3/4 tsp baking soda
3/4 c sour or butter milk (To make sour milk, add 3/4 tsp of white vinegar or lemon juice to milk)
1/4 c melted shortening
1 beaten egg

Directions:
Directions:
Preheat oven to 400º. Combine cranberries and 1/2 c sugar and set aside. Sift flour, salt, soda and remaining sugar. Mix egg, sour milk and melted shortening and add to dry ingredients; stir just until mixed, do not over mix. Stir in cranberries. Fill muffin tins 3/4 full and bake for approximately 18-20 minutes until light brown.

My Mom made these every Thanksgiving & Christmas for as long as I can remember. We didn't really care about any of the other food, just these muffins, warm out of the oven! If you plan to have some of these around for your Holiday meals, double the batch or there won't be any left come dinner time!
