4 large sweet red peppers, chopped
5 onions, chopped
24 large tomatoes, peeled and chopped (blanching them in boiling water for briefly helps loosen their skin)
2 cloves garlic
1 1/2 cups vinegar
2 1/2 Tbsp. salt
1 1/2 cups sugar
1 tsp. cloves
2 tsp. cinnamon
1 tsp. allspice

Mix vegetables and boil 2 hours. Add vinegar, sugar and spices...boil until thick. Pour into properly prepared mason jars and follow canning instructions.

A tasty relish to add to hamburgers and roasts!

Seems traditional to do this on a really hot summer day...kitchen all steamed up...tears flowing with all the onions being chopped...also see if your kids can complain about the smell - that is traditional too. They will forget all the "hardship" when they taste it though!
