3 large garlic cloves smashed
1 2-in piece of fresh ginger peeled and smashed
2 rosemary sprigs
2 thyme sprigs
4 T olive oil
1 large sweet onion, thinly sliced
10-15 ripe plum tomatoes (or 2 cans) peeled and halved
salt & fresh ground pepper

Wrap garlic, ginger, rosemary, and thyme in a cheese cloth bundle. Heat oil in a large skillet. Add onion and saute over moderately low heat until softened, about 10 min. Add the tomatoes and herb bundle, season with salt & pepper and cook over low heat until juices have reduced by one fourth, about 20 min.

Remove herb bundle and serve warm.
