4 c apples, peeled and diced (Rome, Gala or McIntosh are excellent varieties)
1 1/2 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 1/2 c chopped walnuts
2 c sugar
2 c flour
2 eggs
3/4 c vegetable oil
1 tsp salt
2 tsp vanilla

Preheat oven to 350º. Grease and flour two standard-sized loaf pans. Whisk together sugar, oil, eggs, spices, salt, baking powder and baking soda in a large mixing bowl. Stir in flour just until it is evenly mixed. Add apples and walnuts. Stir together until well blended. Pour into prepared loaf pans and bake for 55 to 65 minutes, until center is set.
