1/2 cup butter
2/3 cup chopped onion
1/4 cup chopped green pepper
2 tablespoons chopped Pimento
2 eggs, beaten
1 8 1/2 ounce package of corn muffin mix
1 12 ounce creamed style corn
1 12 ounce drained whole corn
1/2 teaspoon salt, 1/4 teaspoon pepper
2 cups sour cream
2 cups grated sharp cheddar cheese

In a sauce pan, melt butter, add onions and pepper. Saute until onion is soft. Remove from heat. Stir in Pimento. Beat eggs in mixing bowl - fold in all corn. Add muffin mix, salt and pepper - stir in onion mixture. Pour into greased 8 X 12 X 2 inch casserole. Spread on sour cream - sprinkle with cheese. Bake at 375º for 40 minutes.
