"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Beef Stew, by Mike Wallace, is from A Real Southern Comfort,

families or individuals create heirloom cookbook treasures.
Cut beef into 2 to 3 inch cubes. Place in large pot or crock pot. Sprinkle with salt and pepper and garlic. Add the remaining ingredients. Preheat oven to 300º. In the large pot add 2 cups of broth and bring to boil, reduce heat and cover. Place in oven and cook for two hours. Or in crock pot add all ingredients plus 2 more cups water and slow cook for 8 - 10 hours. Serve in bowls with good buttered french bread.
