Apple Cake Recipe

Mix together and set aside:
5 C apples, peeled and sliced
3 T sugar
1 tsp. cinnamon
1 tsp. lemon juice (optional)

Beat together for 2 minutes:
2 eggs
1 C sugar
1/2 C oil
1/8 tsp. salt
1/4 C water
2 tsp. baking powder
1 1/2 C flour
Mix well and place 1/2 batter in pan. Add apple mix. Add rest of batter and bake @ 350 until batter springs back. Double the batter mix for a 9x13 pan. Mix one batch of batter at a time.
