2 1/2 - 3 lbs chicken breast
2 ribs celery, cut up
3/4 cups chopped onion
2 tsp salt
1/8 tsp ground black pepper
1/8 tsp thyme leaves
1- oz frozen mixed vegetables
10 oz can refrigerated biscuits

Directions:
Directions:
Place chicken in large pot. Add celery, onion, salt, pepper, thyme and water to cover. Heat to boiling, reduce heat and simmer, covered 30 minutes or until chicken is tender.

Remove celery pieces from pot and discard. Add frozen vegetables and boil 5 minutes.

Open biscuits; break each biscuit into thirds and drop into simmering broth. When all biscuits are in broth, cover and simmer 10 minutes or until they are cooked.
