7 lbs tomatoes
3 cups lime
4 lbs sugar
2 quarts vinegar
6 teaspoons plain salt
1 stick cinnamon

Directions:
Directions:
Slice 7 lbs tomatoes and cover with 3 cups lime to 2 gallons of water. Soak 24 hours; drain, rinse well, soak 4 hours in fresh ice water, changing water every hour. Make syrup of 4 lbs sugar, 2 quarts vinegar, 6 teaspoons plain salt and 1 stick cinnamon. Pour over tomatoes, let stand over night. Boil 1 hour, pack in jars and seal. Green food color may be added for bright green color, if desired.
