1 cup Uncle Ben's Long Grain Rice
1 small sweet onion
1 small bell pepper
1 jar diced pimentos
1 can beef broth
1 can mushroom soup
4 Tspn vegetable oil
1 tsp salt

Directions:
Directions:
In skillet with lid, heat vegetable oil until hot. Add rice, stir so that it doesn't burn. When rice is brown, turn heat to low, add rest of ingredients along with 1/2 cup water. Cook at least 45 minutes stirring occasionally and adding small amounts of water as needed.
