3 T. butter
3T. flour
1 c. chicken stock
1/3 c. white wine
1 c. half and half
1 tsp. dried tarragon
2 T. Dijon mustard
Salt and pepper to taste
3 tsp. grated Swiss cheese

Directions:
Directions:
Melt butter over low heat. Blend in flour; add liquid ingredients all at once. Cook quickly, stirring constantly until mixture thickens and bubbles. When smooth, add tarragon, mustard, salt and pepper. Stir in cheese.

This is great with Rykie's Phyllo Dough chicken. I spoon the sauce on a plate and then place the chicken on top.
