1/2 c. chopped onion
1 clove garlic,minced
1 T. butter
2 10-oz. pkg frozen chopped spinach, cooked and drained
1 lb. cottage cheese
1 4-oz. pkg. shredded Mozzarella cheese
1/2 c. grated Parmesan chees
3 beaten eggs
1/2 T. fresh lemon juice
3/4 tsp. salt
dash pepper
12 large manicotti noodles, cooked and drained
1 16-oz. jar spaghetti sauce

Directions:
Directions:
Saute garlic and onion in butter. Combine this with spinach, cheeses, eggs, lemon juice, salt and pepper; mix well. Fill cooked noodles with spinach mixture. Place in a 13x9 baking dish Cover and bake at 350 degrees for 40 min. Heat spaghetti sauce; pour over noodles. Sprinkle with additional Parmesan cheese.
