1 lb garbanzos
3 - 4 potatoes
1 small head green cabbage
1 large onion
1-2 bell peppers
1 8-oz can tomato sauce
5-6 cloves of garlic (1 tbsp minced)
salt & pepper - to taste
¼ c olive Oil
2-3 bay leaves
Any or all of the following meats: 1 lb ham; 4-6 strips bacon; or 4-5 chorizos - hot or mild

The night before, clean and rinse the garbanzos and soak overnight in a large pot or Dutch oven in about 3 quarts water. Using the same water, bring to active boil, dice potatoes and cut cabbage into 1” chunks, add to water. Cut meats to desired size, add to water. In a large frying pan, prepare a sofrito: Heat the olive oil; cut the onion and bell pepper into ½” strips and sauté; mince the garlic and add. When the onions are caramelized, add the tomato sauce and bay leaves. Simmer for 10 minutes. Add the sofrito to the pot with the meat and garbanzo beans. Salt and pepper the mixture to taste. If necessary, add enough water to cover all the ingredients. Reduce to a low boil, stirring occasionally. Cook covered for about 2 hours, or until the garbanzos are the desired softness. Serve in bowls, with garlic bread or baguettes for dipping.
