1 pound of fresh green beans
half of a 1 inch slice of red onion
1 T sugar
2 T vinegar
1/2 tsp salt
1/2 tsp fresh ground pepper

Directions:
Cut bacon in half to make 4 small pieces. Put them in a wide
skillet and cook over medium - low heat.

Wash and trim green beans. Dice red onion. In a cup, mix
sugar, vinegar, salt and pepper.

When bacon is crisp, set aside on paper towel. Turn heat
under skillet to high and add onion. Cook about 30 seconds,
stirring, then add green beans. Cook, stirring occasionally,
until green beans are just tender and some perhaps have
browned and wrinkled in places.

Add vinegar to pan and stir quickly to scrape any bits stuck to
the pan.

Put beans on a serving platter and sprinkle with chopped
bacon. Serve with grilled or baked chicken and grilled garlic
toast.
