Rhubarb Pie Recipe

3 cups fresh rhubarb cut in approx 1 pieces
1 egg, beaten
3 T tapioca (not instant)
2 cups sugar
cup soft butter chunks

Directions:
Directions:
Mix rhubarb, egg, tapioca and sugar in a large bowl. Put in uncooked piecrust. Dot top with softened butter chunks. Cover top of pie crust and bake at 450 for 20 minutes. Reduce heat to 350 and bake for 40 minutes or until brown.
