3 cups fresh rhubarb cut in approx 1” pieces
1 egg, beaten
3 T tapioca (not instant)
2 cups sugar
¼ cup soft butter chunks

Directions:
Directions:
Mix rhubarb, egg, tapioca and sugar in a large bowl. Put in uncooked piecrust. Dot top with softened butter chunks. Cover top of pie crust and bake at 450° for 20 minutes. Reduce heat to 350° and bake for 40 minutes or until brown.
