12 large shrimp 2 tomatos chopped 1 scallion 1 clove garlic minced Juice of 2 limes 1 tsp. salt 1/2 tsp. pepper 1/2 diced avocado 1 diced cucumber seeded bunch cilantro Clamato 1/4 c. clam juice 1/2 can cooked corn niblets
Boil shrimp until pink. Drain, cool and shell. Mix tomatos, scallions, garlic, lime juice, salt, pepper, cilantro, cucumbers, corn, clam juice, and Clamato until submersed. Refrigerate for 3 hours or overnigt. Just before serving add diced avocado and garnish with lime wedges. Do a taste test and adjust as needed.
