16 cucumbers 8carrots 8 onions 2 red peppers 2 green peppers 2 tsp salt 1 pt. white viegar 2 c. sugar 1 T. mustard seed
Chop the first five ingredients in food processor. Add the salt- allow to sit for two hours. Drain. Add the remaining ingredients. Bring to a boil. Simmer for 20 minutes in an uncovered saucepan. Place relish in sterilized jars processing for 5 minutes.
This is of course an update. Mom put her vegetables through the old metal hand crank grinder. Mom never processed this relish never have I but that is the safe thing to do!
