2 large (2.25#) sweet potatoes
1/2 c., butter
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1/4 tsp. each nutmeg, cinnamon, ginger
1 tsp. vanilla
1 tsp. lemon extract
1/4 tsp. salt
1 c. evaporated milk
1 9" unbaked pie shell

Bake sweet potatoes until VERY soft. Cool slightly.

Preheat oven to 375. Peel cooked sweet potatoes, place in med. bowl and beat until smooth.
In small bowl beat butter and sugars until fluffy, then add to potatoes and beat til well combined. Mixture will look curdled, that's OK.
Beat in eggs, singly. Stir in spices, vanilla, lemon extract, salt and evap. milk.
Prick pie shell lightly all over with fork tines and place in oven 4 min until surface is set.
Pour filling into shell and bake until toothpick comes out clean, about 1 hr.
Cool completely before serving.
