3 eggs, beaten
2 c. sugar
1 c. vegetable oil
1 T. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 c. grated zucchini
3 c. sifted flour

Directions:
Directions:
In large mixing bowl beat eggs, add sugar & beat well. Add oil & vanilla, & zucchini - mix well.
In another bowl mix dry ingredients. Add to wet ingredients & beat until mixed.
Bake in 2 loaf pans 45 min to 1 hr at 350 degrees, until toothpick comes out clean.
