3-4 chicken breasts
1/2 c. roasted red peppers (in pickle isle)
2 cloves garlic
1/4 tsp. salt.
1/3 c. pesto
1/3 c. mayo

Directions:
Directions:
Put everything in crock pot except pesto and mayo; chicken can even be frozen. Cook on low 6 hours, or high 4 hours. When fully cooked, shred everything with a fork in the crock pot. Toast a really great sandwich bread (focaccia is great). Quarter the focaccia bread and then slice each quarter in half to make 2 bread slices, toast or broil. Mix pesto and mayo together. Spread on both sides of bread. Put shredded chicken and a big slice of tomato and cheese on top. You can make extra and freeze the chicken mixture to save. Just heat it through to enjoy later!
