Cake:
2 c. sifted flour
2 c. sugar
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
1 T. vanilla
1 1/4 c. oil
4 eggs, beaten
3 c. grated raw carrots (1 lb.)

Icing:
8 oz. cream cheese
1 stick butter
3/4 to 1 lb. powdered sugar
1 tsp. vanilla

Directions:
Mix cake ingredients & pour into greased 9x13 pan. Bake at 350 degrees for 1 hr. Cool. Ice with cream cheese frosting.

To adjust this to a 3 layer round cake:

Grease and dust flour on 3 round cake pans with parchment in the bottom

Bake at 325º for 35-45 min, switching racks half way through baking
