Coarsely chopped:
zucchini, yellow squash, mushrooms, onions and fresh tomatoes.
Favorite herbs: dill or basil & rosemary, salt & pepper.
Mozzarella cheese

Directions:
Saute veggies except tomatoes in olive oil with your choice of herbs. Add tomatoes, saute briefly. Sprinkle with mozzarella cheese. Serve immediately.
