1 package orange (or lemon) jello
1 c. boiling water
1 carrot (grated)
1/2 c. celery (diced fine)
chopped onion and nuts (if desired)
1 pint of cottage cheese
1/2 c. mayonnaise
3/4 to 1 c. of whipped cream (Cool Whip is okay)

Directions:
Directions:
Dissolve jello in water. Refrigerate until thick but not yet set. Then, beat chilled jello with hand mixer.

Add grated carrot and celery (and chopped onion and/or nuts if desired).

Fold in the cottage cheese, mayonnaise and whipped cream until blended. Pour into bowl/mold and chill until set.
