4 c. milk, scalded
1 orange peel
1/2 c. rice
1/2 c. sugar
3/4 tsp salt
1 c. light cream
2 egg yolks
vanilla

Directions:
Directions:
Scald milk in top of double boiler. Add orange peel, rice, sugar, and salt. Cook covered until rice is tender, about 45 min. Stir occassionally. Remove orange peel. Combine cream and beaten egg yolks. Stir in small amount of hot mixture. Return to hot mixture and mix. Continue cooking covered until thick, about 20-30 min. Stir occassionally. Add vanilla.
