1/2 Lb (2 sticks) butter, softened
2 1/2 c. peanut butter, crunchy or smooth
1 1/2 boxes confectioners sugar (approx.)
1 1/2 Lb chocolate confectionery coating (from cake decorating store)

Directions:
Cream butter in the bowl of an electric mixer. Add peanut butter and mix well. Gradually add sugar, using more or less as needed to make an easily shaped dough. Mix well. Knead dough a few minutes - by hand or with kneading attachment on your electric mixer. Mold dough into egg shapes and place on wax paper. Using microwave, melt just a little coating at a time. dip eggs into coating one at a time and place on wax paper in refrigerator until set. Makes about 25 medium sized eggs.
