1 large cucumber
8 ounces cream cheese, softened
2 Tbsp grated onion
1/4 tsp salt
1 Tbsp mayonnaise
dash of green food coloring (optional)

Directions:
Directions:
Pare, grate and drain cucumber. Combine with remaining ingredients in food processor.

Serve as is or as a sandwich or canape spread. Thin with sour cream to make a dip for vegetables.

I make small cocktail buns, either whole wheat or regular and spread the mixture on them. It was made popular at Louisville's Benedict's restaurant earlier in this century.
