Short Ribs
4 eggs
Water or milk
Salt
2 cups flour

Beef:
Boil short ribs or beef until tender. Remove the meat from the broth and pick the meat off the bones. Use the broth to cook the noodles. When they are tender and done add the meat and serve.

Noodles:
Beat until very light: 3 egg yolks and 1 whole egg. Add in 3 T cold water or milk and 1 tsp. salt. Stir and work with hands. Add 2 cups flour.
Divide into 3 parts. Roll out paper thin. Place between towels until dry. Roll up like a jelly roll.
Cut the dough into strips. Shake out noodles and let dry before using.

Here’s another recipe that Mary wrote down for me. I confess that I have never made it but Mary made it all the time and this is so delicious! I felt that this should be in this book.
