Corned Beef and Cabbage Recipe

4 or 5 lb corned beef brisket
8 peeled white potatoes
1 green cabbage head, quartered and cored

Directions:
Directions:
Place water to cover the corned beef brisket. Bring to a boiling point and skim.
Cover the pan and simmer until tender for 3 to 4 hours. Skim off excess fat.
Add potatoes and simmer for 15 minutes. Add the cabbage head. Simmer for another 25 minutes. Place the beef on a platter with the vegetables around it. Serve with applesauce and French bread.
