4 whole chicken breasts or 4-5 cups cooked chicken
1 box Uncle Bens Wild Rice, original
1 can cream of mushroom soup, undiluted
1 can cream of chicken soup, undiluted
1 can sliced water chestnuts, drained
1/2 stick butter
1 c. celery, chopped
1/2 green pepper, chopped
1/2 lb. mushrooms, sliced
1 medium onion, chopped
3/4 c. mayonnaise

Directions:
Directions:
Cook chicken and cut off bone in pieces. Prepare rice as directed. Saute onion, celery, green pepper and mushrooms in butter. Combine chicken, rice, vegetables, chestnuts, mayo and soups. Place in large casserole and bake uncovered 30 min. at 350 degrees or until bubbly.

Can be made ahead and refrigerated. Allow extra cooking time.
