1 thin baguette
olive oil
1 lb. tomatoes, sliced
salt and pepper to taste
1/2 cup shredded mozzarella cheese
1/2 cup fresh basil leaves

Directions:
Directions:
Cut baguette on the diagonal into 1-inch slices. Brush both sides of each slice of bread with the olive oil. Place on an ungreased baking sheet and broil until very lightly toasted, about 5 minutes.

Top with tomato slices, salt and pepper to taste, and cheese. Return to the oven and broil until the cheese is melted. Top with the basil leaves. Serve immediately. This makes about 16 slices of toast.
