2 1/3 c. Bisquick
1/3 c. pumpkin
1 1/4 c. oil
2 T. brown sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
2 eggs (whisk before adding)

Directions:

Mix all ingredients together and pour batter onto hot griddle pan. Serve with chopped pecans, warm syrup, and/or cool whip.

These pancakes are so yummy! I got the recipe from my sister and we like to make them around the holidays. You can freeze the extra pumpkin and use it another time if you like.
