1 small potato smooth peanut butter 1 box confectioners sugar
Boil the potato in water until done. Mash with a fork. Beat until smooth. Add confectioners sugar. Stir until dough is workable. Roll out on wax paper. Spread with peanut butter. Roll into a cylinder: shape and cut in 1/2 inch slices.
Wrap in saran wrap and place in refrigerator for 30-45 minutes.
