1 medium onion, chopped
1 medium green pepper, chopped
1 Tbs. butter
2 pints tomato sauce
1/4 cup flour
1 bay leaf
1 Tbs. parsley flakes
1 tsp. salt
1 clove garlic, minced
1/2 tsp. oregano
1 tsp. paprika
1/4 tsp. pepper
1/4 tsp. basil
1/2 cup water
5 chicken boneless thighs
4-5 chicken breasts

Put onion, green pepper (chopped) and butter in a 3-quart microwave-proof casserole dish. Cover and cook on high for 9-10 minutes, or until onion is transparent. Add tomatoes and flour, stir until smooth. Stir in all remaining ingredients except chicken. Cover and cook on high for 5 minutes. Add chicken, immersing in sauce. Cover and cook on high for 25- 30 min. or bake in oven 325 for 2 1/2 hrs. Stir once during cooking in microwave. Allow to stand 5 minutes, covered, before serving with hot spaghetti or rice.
